First test run of one of the flavours I’ll be selling in my vegan ‘bakery’ business! Vanilla cupcakes with vanilla frosting and caramel drizzle (I lost my piping bag so it’s pretty messy)
I also made some Kale Crisps, which were super easy and very tasty for a family dinner. I won’t post the cupcake recipe because I’m still not happy with it, but I’ll post the Kale Crisps because they’re too good not to share :)
1tbsp Vegetable Oil
1. Spread the kale out onto a baking tray, making sure it’s in a nice even layer so it all cooks evenly.
2. Drizzle over 1tbsp Vegetable Oil and toss the kale so it’s mostly covered. Sprinkle with salt.
3. Bake in the oven at 200C for 10-12 minutes or until crisp. Make sure they don’t go too brown and burn - they should keep a relatively dark green colour.
